I am 16; close to 17 and I just got back from boarding school. I live with my mother who is sick and my grandmother. My great uncle is not a legal guardian but it's my grandma's brother and we live in his house. My uncle and grandmother said that I can move out but my mom doesn't seem to want me too... they signed for my mom without asking her and sent me to boarding school; so can they sign for me to stay with someone else?

Of course not. Legally you could not even be at the boarding school if your mom had demanded you returned. Your mom can report you as a run away if you leave without her permission.
