Does anyone know of who or what the photo is in the first season that all pilots (Viper or Raptor) touch whilst entering and especially whilst leaving the briefing room? Its just on the wall and its been bugging me... thanks

The picture in question was actually explained in a scene deleted from the first season episode entitled "33". More detailed information can be found here:

This would be the first season on the newer Battlestar, not the original series, correct.

Exactly so - this is from the first season of the 2003 Battlestar, not the original 1978 one.
