I have a double pole 230v 20amp breaker to install in the box. I want to run it out to the lake and connect a single outlet with a switch.

You are going to need more wires, 1 way could be have a 4 circuit panel at the lake, 2 for thye pump, 1 for the receptacle.
Is the single outlet and switch for a light(s)?
