If probate is granted on my aunties estate can my wife withdraw all funds from aunties account as she is the only named on the bank book that is still alive ?

Depends on how her name is on the account. If its as a joint tenant especially with right of survivorship, she can withdraw the money without probate. However, if the estate is under probate and she isn't a joint tenant, then only the executor can approve a withdrawal.
