My server deleted (without my consent) my sent emails from my mini mac during a problem with emails. They were not stored on virgin media server. Is it possible that there is software that can retrieve these from my hard drive?

If they are gone from the sever then they are GONE for good.
If you have an email client installed on your Mac, and you created then sent those emails from your email client, and you haven't done a compact and rebuild, then yes there is a good chance that you can recover them. But be prepared to pay upwards of a hundred dollars for, Macintosh specific, recovery software.
Nearly all recovery software publishers allow you to download their product for free. You install it and then run the recovery program. If your emails are recoverable they'll be visible in the program. The caveat is that until you purchase a license you can't recover anything. The flip side is that if the recovery software doesn't detect your deleted data, you're not out a penny.
