Are you thinking about removing the saddle valve and installing a new 5/8" compression x 1/4" compression stop (see image) to supply the new ice maker line? If so, that would work fine.. compression is very trustworthy... just follow directions and do NOT overtighten and do NOT use pipe dope on the compression ferrules/nuts, OK?

In terms if which ice maker filter, I'm pretty sure they are all just basic carbon filter systems (see image), so whichever one you purchase just make it readily accessible because, as mentioned in your previous thread on this subject, you will need to change out these ice maker filters every so often (depending on use).

Valve, I could cut off the water.

You could use a tubing cutter or a mini-tubing cutter to cut the copper pipe and then install the compression shutoff.

After the compression shutoff is installed you'll install the ice maker filter which will come with its own 1/4" compression fittings and then connect to the 'fridge to finish the job.
