My 601 packet was backlogged and I spent a year and a half in mexico where I met the love of my life. What are my options as far as petitioning her visa in the future. We are planning to marry when my case is resolved but I don't know what step to take next, I would hate to marry her nad spend the first few years of our marriage separated. What penalties would we face later down the line in terms of processing her visa if we tried to bring her without documentation?

You will not find anyone hear giving you advise for illegal activity. You shouldn't attempt to bring your wife/girlfriend illegally. You will jeopardize your own visa and your and your wife's future chances for a visa. Just wait for your paperwork/visa to be approved. The apply for a dependent visa for your wife.
