I much prefer a slightly lower temp and a longer cooking period
"No peekie, roast beefie"? Long time on low temp for tenderness?
Now I'm hungry. Add mashed potatoes and rich brown gravy--mmmmmmmmmm!
I can't believe both you and I got negative determinations on this. My post re roasting temp and time was given as an approach I have been using for something like forty years and is tried, tested and true advice.
However it does make my profile look a lot like Christmas with all the green and red!
I get dinged all the time, Just had our roast for lunch today, along with the ham. Cooked it about 5 hours, it was falling apart, had onions and whole potatoes in with it.
Let me see also had green beans, corn, dressing, mashed potatoes, lima beans, corn bread. For desert brownies (two types), peach pie, sweet potato pie, and apple pie.
