Do dogs separate each smell they are taking in at one time ?

What do you mean? Like if you are coking meat and veggies, can they smell the difference? I am sure they can, dogs have a very intense sense of smell. They can smell one drop if urine in a gallon of water, so I am sure they can differentiate the different smells.
