If you are trying to determine the age of the jar and contents, I can only say, roman numerals are always used on clocks and other implements because it is classier to do so.
No, it doesn't mean more then what you a reading; someone wanted to use roman numerals, so they did.
Ancient romans did not use green quart jars, if that is what you mean, if not, please elucidate.
