    How to roast a 10 kilo sirloin roast?
    I bought a vacuum sealed 10 kilo USDA choice sirloin from costco. I want to slow roast it at under 300F. How long? Should I sear it?

    You bought a 22 pound sirloin roast?

    At 325 degrees it's 25 minutes a pound for rare. I'd go from there. And I wouldn't sear it, not if it's a good piece of meat.

    My slow cooker won't handle anything that big - or are you talking about slow cooking in an oven?

    If so, rare, medium, well - ?

    Can your oven comfortably fit that amount of roast in one go.

    While 25 minutes per pound will be rare, there's a good chance the centre of the piece won't even get warm, let alone cooked..

    If guesses count I'm guessing it's rolled as opposed to lugging home a quarter of a cow. But, again, it's only a guess.

    A meat thermometer - in either case - is probably a wise investment.
