If a wife leaves her husband after only three years of marriage to live in another state, and there are no minor children involved, what can the husband do to protect himself and his assets during divorce proceeding's?
Protect himself? From what?
Attempting to conceal assets may very well be a crime: don't try it.
If he has any joint financial accounts (bank accounts, charge cards, etc.), take what measures may be appropriate to insure that she cannot raid those funds.
I think he gets an Attorney, familiar with the laws of HIS particular State, and that Attorney legally protects "his" rights, property, whatever.
