I have never seen a manually powered disposal.
I live in the country. I had a sort of epiphany when ours died, and said WAIT - what the heck do I need one for? I compost (and in snow and rain, I just heave it into the bushes) and the very few chicken bones go in the freezer until my next trip to the dump.
Then I discovered that there are entire communities that have outlawed them, go figure.
If you live in the city, hmmm... sounds like a good invention for someone. Do you have a food processor? Put it in there and pour it all down the drain, I suppose. What a waste of good compost though.
Like Joypulv, I compost almost everything too. Toss all the veggie scrap, eggshells, coffee grounds, tea leaves, sawdust etc, in a pile and put it in the garden later. That said, I do have a disposal also.

Hydromaid makes a disposal that works on water pressure, no electrical connection. I installed one in a new house, and was bought by the owner against our recommendation. Two weeks later he called to remove it and replace it with a standard disposal. According to manufacturer it works on 40psi, it took 90psi to get it to work and even then didn't work very well.
