I picked my dog up last Monday from the kennels and she is very quiet and dopey

If its your personal dog, she's quiet because of the change. Continue routine as usual, she will come out of her shell...

If it's a rescue dog, then continue life as normal and your dog will come out of its shell. Start rules of the house right away, Example, if dogs aren't alloud on the couch, then enforce the rule right now. Sleepiness and lethargy is not uncommon for a dog entering a new environment.. Give her two weeks and you will see her true side.
