What should I ask or know before going on vacation with my friend's family?
What kind of questions I should ask or know about the family and extended families member before heading out to North Carolina with my friend's family ?

Ask where you'll be sleeping or who you'll be sharing a room with, ask what you'll need to pay for, what to expect of the family routine, what time do people get up in the morning, are you expected to be present at all meals or are you expected to get your own, are you expected to pitch in with groceries, cooking, or cleanup, what housekeeping issues should you be aware of, what functions are you included in, what are house rules on guests, smoking, drinking... just whatever it will take for you to be the best guest you possibly can!

This depends in part on how old you are. If you are a kid, just ask what the rules are, what you should bring and what you need to pay for, then go with the flow and follow your friend's lead. Bring more money than you expect to need just in case.

If you are an adult, ask what you can contribute or bring, whether snacks, beverages, help with expenses, etc.

There are some things you should just assume unless you're told otherwise - keep your stuff picked up and with your luggage the entire time you are there - do not leave your stuff around. Make your bed each morning unless there's a housekeeping service that does this, and hang up your towels. If you're staying in a home, offer to help with picking up, preparing meals and clean up after meals, no matter your age. If you're asked to help with something, do it immediately and with a smile.

The main thing when you vacation with other people is to just be fexible, be willing to try things that are different from what you're used to with a positive and adventurous attitude, and know that not everyone vacations the same way. And just try to be considerate - if they are a sleep-til-noon family, be quiet in the morning so they are not awakened. If they are up at 8, try to get yourself up, too, so they aren't waiting for you to start the day. Be considerate about leaving common areas like the bathroom neat, don't use up all the hot water - just consider other people and you'll be fine. And have a good time - that's the best thanks to a host, is to know they've invited someone who really enjoyed and appreciated the invitation. Have fun!
