In California, Can I cancel my notice to quit?

Do you really think that is enough info for us to answer? Quit what? More details are necessary.

If you turned in a notice of resignation you can of course rescind it. However, your employer may already have made plans to find your replacement, so your job may not still be available to you. You should talk to your boss ASAP and see what he/she says.
