Rent a power planer and set a straightedge along the side to act as a stop. You could possibly use a power saw with a plywood blade and then sand the edge. /8 removal still gives you plenty of edge thickness.

First choose would be an electric plane. On lock side, adjust plane so u get a slight bevel, about 7 degrees, on side that swings toward door stop.

Second choose a table saw. Will have to sand edge after cut.

    Third hand plane.

    Good luck

Happens to me too. At least we're on the same page. I was going to repost with an angle cut but I'll leave that up to your post. Good old minds must think alike! Brian
