I have a 48" high breakfast bar in my kitchen and I am hanging three pendent lights above it, how high should the bottom of the pendent light be from top of breakfast bar.

Whatever you think looks good. There is absolutely no set number.
If anyone tells you "It should be XX inches above the counter top", they are full of it.
