Does anyone know how I would go about paying employees? Do I have to make tax deductions for each employee by state or do I just use my home state, NY, tax? Or do I pay them as contract labor and let each person take care of deductions themselves?

By their state if they are employees, If they meet the requirements to be a 1099 worker then you may use contract labor.
