It could be because the change of exercise, but it could also be something lacking in her diet. Since she is growing maybe her needs have changed. Try feeding her a banana. If she doesn't take it it could be boredom. Try taking her out on the leash when she poops give her a treat she likes and make her focus on you not the poop. Then clean it up asap.
Sudden changes in routine can make a dog do crazy things.
Instead of the walks which I imagine would be a nightmare with a broken arm, try and find some other activities to do whether it be just solid play in the backyard tossing a ball or learning some obedience tricks.
King Charles Spaniels are a hunting breed. Many of the hunting breeds will eat their own poo. I know disgusting, isn't it, but there's a logical reason for it.
The need to hunt is bred into them, that instinct cannot be taken away. Hunting dogs sometimes eat their own poo so that the prey will not smell their scent. Gross, but makes sense.
Our beagle didn't eat poo until he was around 6 months old, all of a sudden he picked up the habit. One thing to consider is always picking up the poo as soon as he does his business. Don't do it once a day, do it every bowel movement. No poo to eat, no poo will be eaten.
You can also train him to leave it alone, but that may take some time. We did that with our beagle. Whenever he went towards the poo we'd clap our hands and say "leave it", call him to us, and give him a treat. He caught on fairly quickly and the "leave it" command comes in handy with other things as well.
