Here is my situation:

I misappropriated $1000 from a not-for-profit corporation for which I was the treasurer. I did this over a period of one month to fuel a gambling addiction.

I was expecting it to be discovered and now it has. I fully intend to pay back the money -- but I would like to know what I could be charged with, and if I should try to settle this with the Board, or if I should hire a lawyer. I live in Quebec and have no criminal history.

What are my options?

It would be best to hire an attorney and also to not post anymore on a site like this because of it being visible on the Internet. It can be found when people do searches for things. Also, if anyone investigates you because of a crime that you've committed it's very possible that they will want to look at any activity that you've done on a computer and anything that you've posted on a website might possibly be used as evidence for something in court.

You hit the nail on the head in your caption - embezzlement. Sure, you should TRY to settle this with the board, but I'll bet they already called the cops. Yes, you should hire a lawyer. You have no options other than the ones you mentioned. Oh, I guess, you COULD just wait for the cops to knock on your door, but that wouldn't be good.
