I was fortunate to be able to stay home when my kids were growing up as well. Then went back to school to become a primary school teacher. I knew it would take some time, and wondered how I would do it at an older age... but I looked at it as I was going to be that age anyway, might as well have the education and career opportunity at the same time!
Look into what qualifications you would need to work at a vet office. You might find some education programs that will not take too long to complete. You might also be able to take on a lower position at a clinic as you are getting your training.

You certainly were not sitting around eating chocolates and sipping white wine while you raised your family. Think about all the organization and customer service (diplomacy, conversation, appeasement, fairness, leadership, management, etc.) skills you gained while being a mom.
I would put together a concise functional resume to show off your skills. Holler if you need help. Good keywords and evidence of your skills are what you need for a resume and for the business's application that you will undoubtedly have to fill out.
