Is there anybody that has changed struts on a 2002 Ford Windstar that might be able to give me a quick rundown.. or tips. Thanks.

I've never changed them on a Windstar, but they are probably pretty similar to other Fords. Often, you can place the front end on jack stands, place a jack under the subframe on one side of the car, remove the subframe bolts and then screw them in three turns, and lower the subframe with the jack. This should give you the room you need, after separating the lower ball joint from the LCA, to remove the steering knuckle. The link below should help:
