I dont care about grammarians. As a very good administrative secretary years ago, my letter writing was impecable and I would never use you're in a business letter. Anyway in Pitman shorthand (yes, we used that back then) abbreviations are just unknown, In other words, 'you are' has to be completely recognizable in Pitman shorthand because the letter you took down that way, may not be typed for a day or so. There was no room for mis-interpretation.
However, I do see what you mean.
