What Is the Purpose of a Resistor
What is the danger of bypassing a resistor board in a 5 cycle GE Dryer

Current limiting for one thing.. (but its NOT the only possible use for one)... the danger is it could overheat and catch fire or burn out as a worst case. At the least it will not function as designed.

You will damage whatever that resistor is protecting, like a bi-metal switch. Would not recommend.

Exactly... its there for a very good reason. Replace it... don't bypass it.
