What is the proper way to alphabetize a name with an hyphen. As example would Vino-Esquire be alphabetized under "E" or "V"?

You would put the name under V. And you would also ignore the hyphen in comparing with other names, so that for example "Vino-Esquire" comes after "Vinocio" and before "Vinofolio."
