    Why can with steam pressure canner or hot water bath
    We like to can , why and when do you need to use a pressure canner as opposed to a hot water bath canning

    Pressure canner is used when you have meat or dairy in your mixture. Hot water bath is not suitable for this reason and only should be used to veggies, pickles, tomatoes, etc.

    The high heat in the pressure canner is more likely to kill bacteria that actually starts to accumulate as soon as you put the mixture in the bottles, because of the meat or dairy.
