An iguana's sense of taste is good enough to substitute it's sense of smell. It is concentrated in their elongated tongues which they flick in and out
If you wanted to be more specific, they stick out their tongues, catch scent particles in the air, then pull their tongues back in and place those particles on the roof of its mouth where there are special sensory cells. The iguana can use these scent particles to find food or a mate, or to detect enemies.
