    Can I use a 200 amp box with 100 amp service

    Sure can, thou, you still only have a 100 amp service and capacity. If the 200 amp panel has a 200 amp main breaker, since the remaining service entrance is only rated for 100 amps, there needs to be a 100 main breaker ahead of the panel.
