Ceiling fan with no light fixture... do I just cap the red wire?
    - hampton fan has green, black, blue, black and White wires
    - ceiling has no color, red, white, and black wires

I undertand black to black, green to no color, white to white, do I connect the red to the blue or just cap them. The fan doesn't have a light fixture, but I'm not sure what to do with the red and blue wires?

The 2nd black and the blue wire in the fan are for a light kit, if you want to add one, so just put a wire nut on them. The fan needs one white, black and ground which can be green or bare. Your ceiling box tells me that there are likely two switches sending power to the ceiling box, right?

Depending on your switch configuration, you may want to connected black (fan) to red, or black (fan) to black. Cap the spare ceiling wire.
