What is the best thing to clean walls in a kitchen with to get them ready to paint?;)

A mix of TSP (Trisodium Phosphate) and water. Available at your local hardware store.

Grease and cooking residue in the kitchen & I live in las vegas so the windows are rearly opened cause the air or the heat is on and we both smoke so its like the walls have taken on a sort of nicotein shade! And I have celing fans in every room and 2 rooms with air purefiers.
And I've lived in this condo since 1999 and that's the last time the walls were painted!

Then Trisodium Phosphate with water should do the job. I would recommend applying it with a high quality cellulose sponge and then wiping it down with clear water and paper towels. Wiping paper towels over the areas to be painted would also be something that you should do. Doing that, with just water applied to them, should be an indication as to whether you've thoroughly cleaned the walls or not.

I would also recommend painting a primer coat on all surfaces that are to have finish coats applied to them.
