How do you highlight links (blue & underlined) in e-mails so that all a person has to do is click on the link & a new window pops up, instead of having to copy & paste? Thanks.

If you are copying and pasting a link from a website in an e-mail that link will be automatically higlighted and underlined. There is no need of doing it manually. The person who receives your e-mail will have that link in blue and underlined.

Which mail program are you using?
If the receiving person has their email program set to text only then they won't see any hyperlinks.
