Pleaded guilty to embezzlement. 2 years probation, and restitution. 2 years is up as of aug. 18th, and I have not paid restitution. What should I expect?

They may just violate your probation and put you in jail. What exactly does your final sentencing paperwork state? It should be spelled out in great detail what happens if you don't pay your restitution in full by a certain date. More than likely you will be facing your sentencing judge shortly.
