Usually copper wire covered in high temperature enamel. The wire gauge will depend on the motor's design current, which in turn depends on the design maximum torque, number of turns and other factors. Standard motor design texts should cover all this, and readily-available wire tables will tell you the recommended maximum current density for different wire gauges.
