Trying to control sugar and carb intake
What am I lacking in my diet if I find myself eating foods that contain carbs or sugar? I am presently taking synthroid because of underactive thyroid.

Eat more protein (meat, beans) and green leafy vegetables. Cut out pasta.

It's not so much that you are lacking anything, it's more that sugar and refined carbs are very addictive. Smokers don't need anything in the cigarettes, they just want them.

What tickle said is spot on, eat more protein, healthy fat and lots of green vegetables.

It's hard to break an addiction, you'll probably find it's easier to go cold turkey on all white carbs than to cut down.
