    My question is do they need all those leaves and if not how do you trim them

    Hi! doggyt, and Welcome to AMHD :)

    No, they don't need all of them, but I wouldn't go overboard. The leaves produce the food that the plants need.
    They also help shade the plant and fruit.

    But if they are infringing on other produce, go for it! Just take your garden shears and cut anywhere on the leaf stem, or main stalk as the case may be.
    To some degree, most varieties have stingers/nettles on the leaf stem, so you might want to wear gloves.
