I don't know which one to use??

Could that question also refer to the amount of amina acids in albumin?

    Perito

    From http://en.wikipedia.org/wiki/Albumen_(disambiguation)

Albumin (with an 'i') refers to a major class of several hundred proteins (almost all non-globulins) which also predominate in animal connective tissues, especially blood.

I suspect they're both there, along with a number of others.
