If my ex signs a quit claim deed would he be responsible for any debt pertaing to the mortgage?

If your ex signed the mortgage note then your ex is still responsible for the debt, regardless of whether he is still an owner of the property. The only way that your ex will no longer be responsible for the debt is if the lender removes him from the loan (unlikely) or the loan is refinanced in your name only.
