I want to lay about 1/4 inch to 1/2 inch level set in a business and then acid wash it. Will this work or is there a better way to do it for an economical price?

I think you mean self leveling concrete if I read you correctly. You can use a product like Self Leveling Concrete Floor Topping - Edison Coatings, Inc. for light commercial traffic. I have no idea if acid wash will be a good idea though. Are you trying to achieve a look?
And no you will need to take the carpet up
I mised the part about the carpet since it was not in the posters question. It would be a total failure to pour self leveling conncrete on carpet.
Just to back up above answers,, must take out carpet, or money will be wasted.
Thank you,
I am trying to get an acid wash cement floor in a new business I am opening. However, it is an old house and the floor moves a little each year because of a tree in the front. I don't want to use anything with PVC and I have acid wash cement in another business and it is great. The cement slab was there already. So it was simple...
Get rid of that tree. That will become a bigger problem as time progresses if you do not.
Are you asking for a certain product to remove carpet? All I know is that you should not use level quick on top of carpet. Are you wondering what type of product to use to get the old glue off concrete? As far as just removing the carpet, if it was glued down very well, then you may use a heat gun and a spade or trowl to remove carpet and most glue, it can be a time consuming process, but it doesn't cost you anything but time.
