What's the difference in setting up your email between using Verizon, Yahoo & VerizonYahoo?

Verizon is POP3 service, Yahoo is not, unless you pay extra.

That's because I have no idea whether that's a special deal that verizon has with Yahoo to provide e-mail service. That's a question best asked of Verizon.
