We are replacing our one piece fiberglass shower and tub. Do we have to replace it with another fiberglass one or two piece or can we replace it with something else? I hate the look of the fiberglass and would like to use almost anything else.

I prefer baths, and my disabled son has to have a bathtub, however my other sons and my husband prefer the shower. Is it possible to install a bathtub and shower in the same place, but have it be a tile surround, or something like on the walls and not a one piece unit?

You can just buy a tub with no surrounds and tile the walls above that. You don't have to buy the surrounds with a tub.
Its been done like that since I can remember tiling above that old cast tubs.
To build is as a full tile tub and tile walls is a lot of cost because of holding back tub water and concrete is involved for the base and tub wall.

As 21boat suggested, there are options here. I recommend a CAST IRON tub (kohler) or an AMERICAST TUB (american standard). The cast iron tub is very heavy and can be hard to install, but has best finish over many many years. The americast tub is a plastic like tub that mimics cast iron in feel and finish but is 1/4th the weight of the cast iron tub. These tubs would allow you to install cement backer board walls and new tile.

Cast iron does not require a bed of mortar to set tub in... so heavy. Americast voids any warranties if you put it in a bedding material so be sure anyone helping you on this knows that if you go with this tub. Just FYI!

Yes, just like guys said above : install tub, than tub/shower combo faucet, and tile walls. This way, installation will accommodate everybody. Since you have disable person in your family, I would not install rigid shower enclosure. I would go with plastic shower curtain. With curtain, it is easy to get in and out. You can mount ADA approved grab bars on the tile wall to help your son to get in and out.

In addition to the tub/shower valve you can add shower head on a sliding shower arm... see picture below.

This should help to make washing son's hair easier and will also help you in cleaning the tub... :)
