I read very helpful information on this site about shutting off the main water valve when leaving the house for an extended vacation. BUT I would like to leave at least one sink open for the fellow who will come to the house to water the plants. Is it feasible to shut off the water in the individual bathrooms and only leave the kitchen sink open?

The idea behind it is so that if there is a leak... it won't cause damage. Just shutting off the sinks/toilets won't do much.

NOPE!! I don't know where you live but you were planing on leaving the heat on so the water in the pipes and traps don't freeze, burst and cause a big mess, so say nothing of the expense. You either winterize your home completely or you leave it heated. You do realize that just shutting off the water doesn't "wintereize" your home. Pipes will have to be drained and blown clear. All the traps have to be emptied and refilled with cooking oil or anti-freeze. Toilets will have to be drained and flushed with anti-freeze to fill the trap. The water heater drained and the power shut off. My take on your post? If you have to ask if you can leave the heat off and the water on the you haven't read enough of our answers. I leave you wiyh this thought. Shutting the water off at the house shut-off when you leave for vacation's the cheapest insurance you'll ever buy. If you ever come home to a leak that's been lealing on your ceiling or carpet for a couple of weeks you'll see what I mean.

You all are terrific. I had no intention of turning off the heat, only trying to minimize the potential damage -- and clearly clueless about plumbing. Now I just need to figure out how to get water for my plant waterer. Thanks a million! And yes, we just might see each other at the beach.

Be safe! Turn off your water and ask a neighbor if your friend can fill a watering can at one of his hose bibs to water your plants. Have a great vacation. I'll be looking for you out on the beach at Lido Key. Wear plenty of sunscrean. Cheers, Tom
