We just had a new Well-X-Trol water tank installed.
Water pressure is great but once the pump kicks on
the water (and I think air) bursts out of what ever
faucet we have open. The bursts stop as soon as the
pump stops and pressure is normal.

This is just an idea but I do know that it happens, it is possible that your pump is not deep enough into the water and when the pump is running it is pumping water faster than the well can replenish it and it is sucking air. If your tank is connected the way I think it might be the water coming from the pump goes into a pipe that goes directly to the house line as well as into the tank therefore some of the air is coming out your faucets. When the pump cuts off the air stops coming out of the pump and the pressure in the tank then makes the system operate normally until the pump comes on again.
The possible problem could be that the casing that lets water into the pump area is stopped up and therefore does not let enough water to the pump. Or the well water has dropped and the well is pumping some water but also some air. I am not a well person so I don't know exactly what the rememdy is.
