If you are referring to writing it out, below is a guide;
Es la una = It's one o'clock
Son las dos = It's two o'clock
Son las seis de la tarde = It's six o'clock in the evening

When you are going to add minutes, you want to use 'y' (and)
Es la una y diez = It's 1:10
Son las tres y veinte = It's 3:20

When referring to the quarter hour, you use cuarto.
Es la una y cuarto = It's 1:15
Son las ocho y media = It's 8:30

When approaching the hour you would use 'menos' (less)
Es la una menos cuarto = It's a quarter to one
Son las cinco menos veinte = It's twenty to five
