My son lives in my house. His child and her mother moved in less than one year ago. Because of domestic disputes, I have insisted that she leave. She refuses. Law enforcement says that I have to go through eviction proceedings. She uses the address for her employer and voter registration. How much notice do I have to give her? There is no lease. She helped my son with some utilities.

If she still refuses to leave then you have to go to your local district court and go through the process there.

What State are you in? Basically you have to give her the same time frame as she pays rent - if she is month-to-month, then you have to give her 1 month's notice. Some States require a 3 or 5 day period and then the 30 days.

Doesn't matter who pays the utilities - it's your house and you can evict her for any reason you choose.

If she does not pay rent you are - again, depending on the State - probably going to have to give her 30 days.

First she is not a squatter, a squatter is someone who breaks in and stays without anyone knowing it basically,

She is a resident, not even a guest at this point, she was allowed and welcomed in. Also if your son is a legal resident, he is allowed to have her there also, so as long son wants here there, he can also keep her there, so you may have to kick the son to the curb also.
