I am remodeling my kitchen and I am installing a new line for my dishwasher and disposal.
My diswasher is 5.3 amp max according to the manufacturer and the disposal is 7.3 amps.
1st: Is a 15 amp circuit acceptable here?
2nd: Is a GFCI required for the under the sink outlet to be used for the dishwasher?
3rd: The disposal is hardwired - What do I use to ancor the wire coming through the sheetrock wall? Or Do I need anything but a hole?

A 15A circuit would be OK, a 20A is preferred.
The disposal should NOT be hardwired. You should install a cord and plug on it.

No, the receptacle under the sink does not need GFI protection.

I would like to follow this question up.
So install a 20 amp outlet, but split the outlet into 2 with one for the diswasher and the second would go to the disposal switch to turn on this portion of the outlet?

Sounds right.
Use a big box, like a 4" square with a duplex receptacle "industrial" cover. This will give you enough room to make all the necessary splices.
