I'm remodeling a bathroom and the galvanized steel pipes are pretty rusty and just hard to work with. Would CPVC be a suitable replacement? It seems to be easy to work with. If not, what might be a better choice?

I would not use CPVC if you paid me. Go with copper, PVC or PEX. The price of copper has risen and it can be difficult in a remodeling setting, this makes PEX a great, cheaper solution that can snake between studs and joists without cutting them.
I agree completely except for the part about cpvc its okay in some apps but I wouldn't do a whole house or even a full remodel with it anymore. There is still plenty of cpvc around in my neck of the woods so about all I use it for anymore is if I have a repair that needs just a section replaced or a short extension to say a new toilet. Copper is good but is more often than not a pain in remodeling. Pex is as ballenger stated great I love it and use it regularly in remodeling applications. So that being said if at all possible I would use pex ? GOOD LUCK, AC
Hey ballenger, just a side note why don't you like to use cpvc ? Just curious(maybe something I don't know)
