    Fatless sponge.
    I have tried twice to make a sponge without using any margarine or butter and both times the cake didn’t rise very well, it turned out more like a sponge ball. When it says in the recipe fold in the flour are you supposed to use a knife or a spoon. Can anyone help as even the birds can't fly after eating a piece.

    :rolleyes: I prefer using a rubber spatula for folding in- fold in the flour in 2 batches- making sure that you fold in only till u don't see any dry flour each time (over-mixing would result). Also make sure you are rotating the bowl clockwise as you fold, scraping the bottome of the bowl each time. Hope the birds fly after this:))

    For me the secret of making a fatless sponge cake is to heat the bowl first I do this by filling bowl with boiling water empty and dry quickly.
