You would need to verify you have enough support for fan,
You could leave switch in place and use light kit(s). Then they could all be switched on and off where you left settings.
1 control can control 2 fans, has to handle current and you lose lighting ability.
You could install remote receiver in each fan, and have separate fan and light control.
"1 universal wall control" do you mean the existing switch, yes you can. Like Strat points out you must confirm you have a good attachement for the fans. You can buy hanger kits made to fit inside the opening of a light box and then expand to dig into the two ceiling rafters above the ceiling of the porch. Are you using fans with small chains to control the speeds or what?
Would the ceiling fans have lights? If so, we will need to determine how many wires you have, and how you want them controlled.
If you will be using a speed control, make sure it is capable of handling more than one fan.
