Change a 3 phase flat top to single phase
My wife's church recently purchased a used commercial 3 phase griddle(flat top). How can it be wired to use single phase 220/240 V. It's on a 60 AMP breaker.

Heartbeat, I think you'll get some answers if we move you over to the electrical site.

Check the unit to see if it can be changed over to accept a single phase feed, and keep in mind the circuit rating size.

Otherwise, it will not work properly on a single phase supply.
